A flourless chocolate cake, taken years ago from a [regrettably] now-deleted blog by a lovely Messianic Christian lady.
Ingredients:
1 lb / (454g) chocolate
½ / (113g) cup margarine
1 tbsp hot water
4 eggs
1 tbsp potato starch (I substitute glutinous rice flour)
Procedure:
1. Break chocolate into small pieces, add margarine and 1 tbsp hot water—melt over the stove on low heat, or microwave on low watts;
2. In a separate bowl, beat eggs on high until thick, then….
3. Beat in the potato starch/glutinous rice flour, then the melted chocolate mixture until well blended;
4. Spread evenly on a greased pan;
5. Bake for 12-15 minutes in an oven pre-heated to 425F/218C (I have a fan oven so I lower the temperature a bit).
