Pancakes (my favourite recipe)


My favourite pancake recipe is something I got from allrecipes.

1 cup plain flour
1 tbsp sugar
1/2 tsp salt
2 tsp baking powder
1 egg
3/4 cup milk
1/4 cup shortening (melted)

You’re supposed to separately combine the dry ingredients from the wet ingredients, with the latter stirred into the dry ingredients–but I usually just dump them all together in a bowl 🙂

  1. We just tried Elderberry Syrup on our Pancakes yesterday, wow I can’t describe the taste! I am actually not much of a fan of mixing fruits / fruity flavours with pastries and milk / chocolate based foods but this was great, I later went on to smashing up some foraged Blackberries on top of a pancake then coating with the Elderberry syrup and this was excellent as well, I will post a recipe for the Elderberry Syrup in the coming days and message you.
    If you can, go out asap and get some of the berries (throw them in the freezer for now). the Syrup has medicinal properties / applications as well so this is a worthwhile recipe to make a few batches of 🙂

    • Hi Jeff, I am not familiar with elderberry, so will wait for your post. As to blackberries–yes, we do forage every year! 🙂 ‘Would be great to see what else you do with it to diversify from our usual crumble and pie.
