Couscous (#1)

What went into my couscous this time….

Ingredients:couscous1_cookingflip
olive oil for sauteing
2 cloves garlic (minced)
1 white onion (julienned)
1 chili (cut into small pieces)
1 yellow capsicum (julienned)
3 small tomatoes (sliced)
1/8 pumpkin (diced)
1 courgette (diced)
salt & pepper to taste
250ml boiling water
350g couscous
salted cashew nuts (to add when serving)

Procedure:
1. In a large pot saute garlic, onion and chilli
2. Add capsicum.  When fried…
3. Add tomatoes.  When juices start to run…
4. Add diced pumpkin.  When cooked halfway through…
5. Add diced courgette.  When cooked…
6. Add salt & pepper to taste
7. Then the boiling water—followed by the couscous (right away so as not to overcook the vegetables)
8. Keep mixing until all liquid is absorbed
9. Turn off stove and leave for 5 minutes
10. Turn on stove for 1 minute while fluffing the mixture with a fork
11. Serve and top with cashew nuts

    • Hi Kewan, we don’t have couscous back home either–I got my first taste of it from a friend’s plate in a Greek resto in Manila :). Have not tried it with meat–I’ve never seen it prepared with meat (yet) here in the UK; usually with olives and feta cheese which I also make sometimes. ‘Would be interesting to see how you prepare yours with mince.
