Fudge

This is a plain fudge recipe – no fancy flavourings.  With fresh milk that was about to turn soon, something had to be done.  Playmate scoured the internet, made handwritten notes and proceeded to make this lovely fudge (I suspect the recipe was from here or here).  What I like about it is it’s not so sweet (compared to the other recipes we’ve made, although we love them too), and it’s got a crumbly consistency.

Ingredients:
(for 18cm2 tin)

300ml whole milk
350g sugar
100g unsalted butter
1 tsp vanilla extract

Procedure:
1. Put milk, sugar and butter in a heavy-based saucepan. Heat slowly, stirring all the time until all dissolved.
2. Bring to boil for 15-20 minutes, stirring always. When the mixture rises dramatically – take it off the heat, stirring always, until it subsides.
3. When mixture reaches soft-ball stage (115C), remove from heat and stir in vanilla. Leave to cool for 5 minutes.
4. Beat the mixture with a spoon for a few minutes and it starts to thicken and gloss disappears. Pour mixture immediately into tin and leave to set at room temperature.

Note: From this same recipe, we’ve made flavoured ones too – with coffe, and with cardamom.
