What went into my couscous this time….
olive oil for sauteing
3 cloves garlic (minced)
1/2 courgette (diced)
1/2 yellow capsicum (julienned)
1 tomato (sliced)
8 green beans (cut into small pieces)
4 tbsp cooked red kidney beans
375ml boiling water
some left over marinated semi-hard cheese cubes and mixed olives
I would have followed a similar process as I did with my first couscous recipe in this blog. Saute the garlic, add the courgette to fry, then the capscium, then the tomato. When the tomato starts running, add the green beans–when cooked, add the red kidney beans. Add the couscous, mix, then add the boiling water, keep mixing. Throw in the cheese cubes and mixed olives, mix lightly so as not to crush them. Cover the pot, turn off the stove, wait for 5 minutes, then lightly mix the couscous to fluff and serve!
