Mango salsa

This is a side dish served especially with grilled or fried meat.

Ingredients:

Mango
Tomato
Salted/red egg (cured duck egg)*

Onion (optional)
Shrimp paste (optional)

Procedure:

  1. Dice the mango and tomato
  2. Dice the egg and be careful not to mash them
  3. Mince the onion
  4. Mix together with shrimp paste (optional)
  • This is bought boiled already and cured.  It is very salty.  Similar to the the century egg that you can order from Chinese restaurants, except that the egg white is still white and opaque (not black and translucent like a century egg’s).
