Not sure how others make their ratatouille but this is how I’ve always made mine.  Ingredients are just: olive oil, onion, capsicum, courgette, aubergine, tomatoes, salt and pepper.  I like all the vegetables thinly sliced as well and not chunky.

  1. Caramelise thinly sliced onions in a generous amount of olive oil.  Add slivered capsicum to fry.
  2. Add thinly sliced courgettes, then the thinly sliced aubergines.  Stir, cover, wait for the vegetables to wilt.
  3. Add sliced tomatoes, cover and stir once in a while until the tomato juice starts running.
  4. Season with salt and pepper.

To serve I pair with any carbs–rice, potatoes, but best with bread. 🍆🍞🍛

  1. I ate ratatouille the other day, but they served it with barley. It goes well with it too, but like you said, any carb does. 🙂

    • Oh, thanks for telling me that, Rini–I always have barley (pearl barley, that is)–seems like that would complement better. I’ll try it some time 🙂
