Not sure how others make their ratatouille but this is how I’ve always made mine. Ingredients are just: olive oil, onion, capsicum, courgette, aubergine, tomatoes, salt and pepper. I like all the vegetables thinly sliced as well and not chunky.
- Caramelise thinly sliced onions in a generous amount of olive oil. Add slivered capsicum to fry.
- Add thinly sliced courgettes, then the thinly sliced aubergines. Stir, cover, wait for the vegetables to wilt.
- Add sliced tomatoes, cover and stir once in a while until the tomato juice starts running.
- Season with salt and pepper.
To serve I pair with any carbs–rice, potatoes, but best with bread. 🍆🍞🍛
