Ratatouille

Not sure how others make their ratatouille but this is how I’ve always made mine.  Ingredients are just: olive oil, onion, capsicum, courgette, aubergine, tomatoes, salt and pepper.  I like all the vegetables thinly sliced as well and not chunky.

  1. Caramelise thinly sliced onions in a generous amount of olive oil.  Add slivered capsicum to fry.
  2. Add thinly sliced courgettes, then the thinly sliced aubergines.  Stir, cover, wait for the vegetables to wilt.
  3. Add sliced tomatoes, cover and stir once in a while until the tomato juice starts running.
  4. Season with salt and pepper.

To serve I pair with any carbs–rice, potatoes, but best with bread. 🍆🍞🍛
