Got squid again–not live, but at least not frozen–yay! I gutted them myself–ugh, my hands really stank even after washing them several times!
I marinated them overnight in the fridge in a mixture of minced garlic, lemon, a bit of soy sauce and ground pepper. ‘Put them under the grill the next day–a bit longer than most people would–yes, it turned out a bit chewy but not tough (that’s how I like it folks–I cringe when they’re still a bit slippery), and still very succulent.
The marinade–I transferred it to a skillet and boiled ’til it became thick–that’s sauce for my rice!
