I had mussels again. Using the same recipe (i.e, steaming in a pot with slivers of ginger and NO water), I just added shredded corn and green beans.
1-inch ginger (sliced thinly)
1 cob corn (shredded)
10 green beans (cut into 2-inch length)
salt to taste
In a pot, place the ginger and the vegetables at the bottom. Top with the mussels. Cover and turn on the stove and put on low.
Keep an eye when the vegetables and mussels start sweating. When you hear the pot boiling, the moment the shells open–turn off the stove.
*You can also saute garlic, onion and ginger first before adding the vegetables and mussels.
